Vegetarian Chili RECIPE


1 medium onion, chopped

4 cloves garlic, pressed or minced

1 tablespoon olive oil

2 medium carrots, finely chopped

2 medium tomatoes, chopped

2 15 oz. cans black beans, drained

1 pinch cayenne pepper, chili powder, or chili seasoning mix

1 tablespoon parsley, freshly chopped

Nutritional Info

Fat: 2.9g
Carbohydrates: 23.0g
Protein: 7.2g

1. Saute the onions and garlic in oil in a large sauce pan.

2. Add carrots, tomatoes, herbs, spices, and beans.

3. Cover (to retain moisture) and cook on medium heat for 15-20 minutes, or until the carrots are tender.

Serves 6.

Felt good - had a huge salad with chicken,instead of fries. Going to try to resist the siren song of fries, as when I get home I can eat the chips in my bag instead. Chips + ice cream/soda is less calories than a basket of fries.

Note to self - Rookies Sports Bar has a really good salad, and can add chicken on it for more heft. Much better than my old soup+salad combo. And get the ranch dressing.

Bought a ton of veggies tonight, along with some tofu and eggs. I also have the chicken and rice to eat this weekend. This weekend? Be a homebody and cook a lot at home.

The spinach, mushrooms, onions, and green beans - some of those can be mixed in with the eggs for breakfast, with coffee to drink. Lunch and/or dinner can be a veggie and tofu stir fry.

For lunch next week: buy some chicken. Put a rub on it, cut it up, and cook it up. Add the rice mixture and some steamed/stir fried veggies.

A quadrant of a hugeass cookie! I'm not being very good at this 'dieting' thing. I love food too much. At least I have tofu and veggies for lunch.

I HAD VEGGIES AND TOFU FOR LUNCH. Now, time for our 'let's watch my boss get shitfaced and rant' meeting while I tune everything out and read soccer gossip on my phone.

Veggie soup with white rice, and a Landjaeger. There's not a birthday cake because the birthday committee is busy with an emergency, so I'm going to have some birthday cereal instead.

AND NOW I HAVE TO WAIT UNTIL NOON OR SO UNTIL I EAT AGAIN. argh this is HARD I'm hungry NOW. But no, I have green tea and water. Need to tell myself that the rumbling stomach is a GOOD thing. At noon I can have the rest of my veggie potato soup with rice.

11:13 pm - Exercise notes:

When I walk quickly, it registers as 'High Activity' on my FitBit. And I can definitely feel the difference! I can also do this easily with a light backpack. Burned a chunk of calories walking quickly waiting for the bus.

And dark chocolate really does quell the sweet tooth. Even better than Jaegermeister.
